The "5 Musts and 2 Don'ts" for preventing food poisoning: Please implement food safety education and training, and hygiene and safety management.

Subject:Regarding the "5 Musts and 2 Don'ts" principles for preventing food poisoning, please implement food safety education and training, and hygiene and safety management. Please be informed.
Explanation: 
I.In accordance with the letter from the Ministry of Education, Department of Secondary Education, dated April 15, 115, Ref. No. 1150036204.
II.Recent major food poisoning incidents indicate that there is still room for improvement in the hygiene management of food preparation and supply chains in Taiwan's catering industry. In addition to violating the Act Governing Food Safety and Sanitation and related criminal liabilities, food poisoning incidents can also have a significant impact on the reputation and operations of businesses. Therefore, schools are requested to strengthen their guidance to on-campus catering businesses to implement the following:
(I)Continue to educate and promote the "5 Musts and 2 Don'ts" principles for preventing food poisoning to food service personnel, including: "Wash hands," "Use fresh ingredients," "Separate raw and cooked foods," "Cook thoroughly," "Maintain proper storage temperatures," "Do not drink spring water," and "Do not pick, eat, give, or receive unknown plants and animals," to reduce the risk of cross-contamination and pathogen growth.
(II)Given that eggs and their processed products are high-risk foods for food poisoning, please strengthen related publicity and management measures, including proper refrigerated storage of eggs, avoiding the use of cracked eggs, thorough cleaning of utensils and work environments after operation, prioritizing the use of washed eggs or pasteurized liquid eggs, and ensuring that food is fully heated to reduce the risk of food poisoning.
III.Promotional materials related to food poisoning prevention have been posted on the website of the Food and Drug Administration, Ministry of Health and Welfare (Path: Food and Drug Administration, Ministry of Health and Welfare Homepage > Business Areas > Food > Catering Hygiene > Food Poisoning Prevention Zone, http://www.fda.gov.tw/TC/site.aspx?sid=1816&r=152856057). Schools and childcare service institutions are requested to strengthen publicity and utilization of these materials, and to implement food safety regulations and self-management of food hygiene to protect the rights and interests of faculty, staff, and students regarding catering hygiene and safety.
